Turkey-Roulade

Though a whole roasted turkey may be the traditional centerpiece of a Thanksgiving or Friendsgiving feast, this turkey roulade—a boneless turkey breast stuffed with a breadcrumbs flavored with leeks, cranberries, and clementines—is a worthy (and arguably more delicious) alternative. The roulade is easy to cut into neat slices, and leftovers can be easily carved for superlative day-after sandwiches. NOTE: The filling and pan sauce get spiked with some bourbon, but if you prefer, you can substitute additional turkey or chicken stock.

Here’s the perfect dip for entertaining. Why? Aside from its cheesy, roasted garlic goodness, the whole thing can be made ahead before cooking and refrigerated. Then, about a half hour before serving, all you need to do it stick it on the grill. Serve it with sliced apples, crostini, crackers, or crudité for dipping.

This simple to make recipe pairs perfectly with Traeger’s Winemaker’s Blend Pellets and any of your favorite medium body red or white wines. Start by coating the entire chicken with the lemon juice, then sprinkle with salt, pepper and rosemary. Pop half a can of beer inside the chicken, and carefully place it on the grill. Once the chicken hits 165 degrees it’s good to go.
