Sweet, grilled watermelon and tart lime combine for the perfect summertime sip. You can buy smoked simple syrup or make it yourself. To make it, combine equal parts sugar and water in a pan and smoke it at 180°F, stirring occasionally, for 2 hours. Let cool then refrigerate, covered, for up to 2 months.

2 Small | seedless watermelons, sliced into wedges |
1/4 Cup | plus 2 tablespoons olive oil |
To Taste | kosher salt |
1/4 Cup | smoked simple syrup (homemade or store-bought) |
Juice of 4 limes | |

When ready to cook, set the Traeger temperature to 450°F and preheat, lid closed for 15 minutes.

Drizzle the watermelon slices with the olive oil and season with salt.

Place the watermelon directly on the grill grates. Close the lid and cook, flipping once, until grill marks appear on both sides, about 10 minutes total. Remove from grill and transfer to the refrigerator to cool, at least 30 minutes.

Reserve 4-6 slices of watermelon for garnish, then cut the rind off of the remaining slices. Transfer the watermelon flesh to a blender and add the lime juice and smoked simple syrup. Blend until smooth.

Pour the watermelon juice into a pitcher and add ice and soda water. Stir to combine.

Pour the punch into Collins glasses and garnish each glass with lime wheel and reserved watermelon slice. Serve immediately. Enjoy!
