Pop in your mouth goodness. These olives are best paired with smoke.

1 Pound | mixed olives |
1 Quart | extra-virgin olive oil |
1 Whole | orange zest |
1 Whole | lemon zest |
1/2 Tablespoon | red pepper flakes |
1/2 Tablespoon | dried fennel seed |
3 Whole | dried bay leaves |
4 Whole | thyme sprigs |
4 Whole | rosemary sprigs |
Step 1
When ready to cook, start the Traeger grill on Smoke and leave the temperature to the smoke setting.
Step 2
Lay the olives out on a roasting pan and place on the grill. Smoke for 20 to 30 minutes or until the olives have a smoky flavor.
1 Pound mixed olives
Step 3
Remove from the grill when olives reach desired smokiness and cool. Once cooled, combine smoked olives, olive oil, orange and lemon zest, red pepper flakes, fennel, bay leaves, thyme and rosemary. Store in an airtight container ensuring all the olives are submerged.
