When ready to cook, set the Traeger temperature to 300°F and preheat with the lid closed for 15 minutes.

Line a rimmed baking sheet with foil or parchment paper.

In a medium bowl, combine the almonds and 1 tablespoon of olive oil and stir until the nuts are coated. Add more oil if needed. Sprinkle lightly with Cajun rub and sugar, and stir until the almonds are evenly coated. Pour the almonds onto the baking sheet in a single layer.

Place the baking sheet directly on the grill grates. Close the lid and roast the nuts, stirring occasionally, for 30 minutes or until roasted, and golden brown.

Remove the baking sheet from the grill. Let cool, then transfer the almonds to a container with a tight-fitting lid if not serving immediately. Enjoy!
