It's thyme you tried this bubbly cocktail. Vodka and club soda are hit with a homemade smoked plum and thyme simple syrup, for a summery sip.

1 Cup | smoked simple syrup (homemade or store-bought) |
2 Ounce | vodka |
3/4 Ounce | Fresh lemon juice |
1 Ounce | smoked plum and thyme simple syrup |
2 Ounce | club soda |
1 Slices | smoked plum, for garnish |
1 Sprig | fresh thyme, for garnish |

When ready to cook, set the Traeger temperature to 180℉ and preheat, lid closed for 15 minutes. For optimal flavor, use Super Smoke if available.

Cut plums in half and remove the pit. Place the plum halves directly on the grill grate and smoke for 25 minutes.

Plum and Thyme Simple Syrup: After 25 minutes, remove plums from the grill and cut into quarters. Add plums (reserving 1 slice for garnish), thyme, and Traeger Smoked Simple Syrup to an oven-safe pan. Place on the Traeger and let smoke for 45 minutes. Remove from grill, strain, and let cool.

Add vodka, fresh lemon juice, and smoked plum and thyme simple syrup to a mixing glass.

Add ice and shake. Strain over clean ice, top off with club soda, and garnish with a piece of thyme and slice of smoked plum. Enjoy!
