If your favorite camping dessert is dutch oven peach cobbler, try our smoky peach cobbler cupcake recipe. Enjoy wood-fired goodness without toting a dutch oven up a mountain.

Bring a pot of water to a boil. Turn peaches upside down and cut a small shallow X across the bottom. Put peaches in boiling water and boil for 1 minute to help loosen the skin.

Drain the peaches into a colander and rinse off with cold water. Peel skin off peaches.

Filling: Dice peaches and place into a large pan. Cook peaches over medium heat. As it starts to sizzle, add sugar, lemon and cinnamon. Cook mixture on medium heat for 10-15 minutes until a majority of the juice from the peaches evaporates leaving a thick syrup.

Transfer to a bowl to cool.

When ready to cook, set the Traeger to 350℉ and preheat, lid closed for 15 minutes.

Cupcakes: Follow the directions on box cake mix and put the mixture into cupcake pan with liners.

When grill has preheated, bake cupcakes for 13-16 minutes, until a light golden brown.

When cupcakes have cooled, use a piping bag to pipe the peach cobbler mixture into the middle of the cupcake.

Ice with your favorite vanilla icing. Enjoy!
