Grilled Strawberries
4 strawberries
granulated sugar, for coating
Burnt Orange Agave
1 orange, sliced into wheels
1 Tablespoon smoked simple syrup (homemade or store-bought)
1 Cup Agave syrup
2 Ounce water
Cocktail
1/2 Ounce burnt orange agave
3 kiwi slices
2 Ounce rum
2 Ounce smoked orange and pineapple juice

grilled pineapple, for garnish

    When ready to cook, set the Traeger temperature to 325°F and preheat with the lid closed for 15 minutes.

    Make the grilled strawberries: Cut the strawberries in half lengthwise and coat the cut sides in granulated sugar. Place the strawberries, cut-side down, directly on the grill grates. Close the lid and cook until caramelized, 15-20 minutes. Remove from the grill and let cool

    Meanwhile, make the burnt orange agave: Brush the orange wheels with the Traeger Smoked Simple Syrup. Arrange the orange slices directly on the grill grates, close the lid, and cook until slightly charred.

    In a medium saucepan, stir together the agave syrup and water. Transfer the orange slices to the agave mixture, making sure they are fully submerged.

    Reduce the Traeger temperature to 180°F. Once the grill comes to temperature, place the saucepan with the orange slices on the grill, close the lid, and let steep for 45-60 minutes, stirring every 10 minutes.

    Smoked Juice: Pour equal parts fresh squeezed orange juice and pineapple juice into a shallow sheet pan. Place the sheet pan directly on the grill grate and smoke 45 minutes. Remove from grill, set aside and cool.

    In a mixing glass add burnt orange agave, slices of kiwi, and grilled strawberries. Muddle lightly. Add ice, rum and smoked juice. Shake and double strain over ice.

    Garnish with a grilled pineapple and Italian cherry on a skewer. Enjoy!
