When ready to cook, set the Traeger temperature to 300°F and preheat with the lid closed for 15 minutes.

Remove the membranes from the back of each rack of ribs by sliding a butter knife between the membrane and the bone over a center rib, then gripping the membrane with a paper towel and pulling away. Trim any excess fat. Season both sides of the ribs with Traeger Pork & Poultry Rub. Let sit for 10 minutes.

Place the ribs directly on the grill grates. Insert the probe horizontally into the meaty part of the ribs, avoiding the bones. Close the lid and cook, spraying with apple juice every 30 minutes, until the internal temperature reaches 202°F, about 2 1/2 hours total.

Remove the racks from the grill and let rest for 10 minutes before slicing between the bones into individual ribs and serving. Enjoy!
