Say aloha to good times with this grilled cocktail. We take bourbon, simple syrup and lemon juice combined with homemade grilled pineapple juice, for a drink that will give you this island vibes no matter where you are.

1 Whole | pineapple, trimmed and sliced |
1/4 Cup | palm sugar |
1 1/2 Ounce | bourbon |
1 Ounce | smoked simple syrup (homemade or store-bought) |
5 Ounce | lemon juice |
1 Pieces | grilled pineapple chunk, for garnish |
1 Pieces | pineapple leaf, for garnish |

When ready to cook, set Traeger temperature to 350 °F and preheat, lid closed for 15 minutes.

For the Grilled Pineapple Juice: Dust pineapple slices with palm sugar. Place directly on the grill grate and cook for 8 minutes per side.

Remove from grill and let cool. Reserve a few pieces for garnish. Run remaining pineapple pieces through a centrifugal juicer to extract juice.

To Make the Drink: Add bourbon, grilled pineapple juice, simple syrup and lemon juice to a cocktail strainer with ice. Shake vigorously. Double strain into a chilled coupe glass. Garnish with grilled pineapple chunk and pineapple leaf. Enjoy!
