1 Wholesweet potatoes
1 Wholered onion, diced
1 Wholezucchini
1 WholeSquash
1 Largetomato, diced
As Neededvegetable oil
As Neededsalt and pepper

Steps

  • Step 1

    Preheat grill to high setting with the lid closed for 10-15 minutes.

  • Step 2

    Slice all vegetables to a ¼ inch thickness.

    Ingredients
    • 1 Whole sweet potatoes

    • 1 Whole red onion, diced

    • 1 Whole zucchini

    • 1 Whole Squash

    • 1 Large tomato, diced

  • Step 3

    Lightly brush each vegetable with oil and season with Traeger's Veggie Shake or salt and pepper.

    • As Needed vegetable oil

    • As Needed salt and pepper

  • Step 4

    Place sweet potato, onion, zucchini, and squash on grill grate and grill for 20 minutes or until tender, turn halfway through.

  • Step 5

    Add tomato slices to the grill during the last 5 minutes of cooking time.

  • Step 6

    For presentation, alternate vegetables while layering them vertically. Enjoy!
