Our grape lime rickey recipe starts by smoking red grapes low-&-slow until tender, then grilling fresh limes directly on the grill grates. Mix it all together with lemon-lime soda for a refreshing and unique wood-fired drink.

1/2 Pound | red grapes |
1/2 Cup | plus 1 tablespoon sugar |
1/2 Cup | water |
1 Whole | limes, sliced |
2 Whole | limes, halved |
1 | Liter of lemon lime soda |

When ready to cook, set Traeger to 180℉ and preheat, lid closed for 15 minutes.

Rinse grapes well and place in a shallow baking dish. Combine 1/2 cup sugar and water and stir until sugar dissolves. Pour over grapes.

Place the baking dish directly on the grill grate and smoke for 30 to 40 minutes until grapes are tender.

Remove from the grill and pour the entire contents of the baking dish in a blender. Puree on high until smooth then pass the mixture through a fine-mesh strainer.

Increase Traeger temperature to 350℉.

Toss the lime slices and lime halves with 1 tablespoon sugar and place directly on the grill grate. Cook for 15 to 20 minutes or until grill marks develop. Remove from grill and set slices aside. When cool enough to handle, juice grilled lime halves.

To build the drink, fill a pint glass with ice. Pour in 1-1/2 ounce grilled lime juice, 1-1/2 ounce smoked grape syrup and top off with soda. Garnish with grilled lime slice. Enjoy!
