1 Pound | pork belly or slab bacon, diced into 1-inch cubes |

When ready to cook, set the Traeger temperature to 350°F and preheat with the lid closed for 15 minutes.

Fold a 12-inch x 36-inch piece of aluminum foil in half and crimp the edges so there is a rim. Using a fork, poke holes in the bottom of the foil. This way, some of the bacon fat will be rendered out and the bacon bites will be crisp.

In a large bowl, combine the brown sugar, ground fennel, salt and black pepper. Stir to combine. Place the diced pork belly into the sugar mixture and toss until well-coated. Transfer the pork pieces to the foil.

Place the foil directly on the grill grates, close the lid, and bake until the pieces are crispy, glazed and bubbly about 20-30 minutes.
