Sip on this smoky and sweet cocktail. This tequila-based cocktail combines smoked raspberries, sweet simple syrup and a little acidity for a perfectly balanced drink you'll be reaching for time and time again. You can find smoked simply syrup at some specialty markets, but it's easy to make yourself by mixing 2 cups water with 2 cups sugar in a 13x9-inch pan and smoking it, stirring occasionally, at 180F for 2 hours. Let cool and store in the fridge for up to 2 months.

1/4 Cup | smoked simple syrup (homemade or store-bought) |
3/4 Ounce | smoked raspberry syrup |
1 1/2 Ounce | reposado tequila |
1/2 Ounce | lime juice |
1/2 Ounce | lemon juice |
1 Whole | grilled lime wheel, for garnish |

When ready to cook, set Traeger temperature to 180℉ and preheat with the lid closed for 15 minutes. For optimal flavor, use Super Smoke if available.

For Smoked Raspberry Syrup: Place fresh raspberries on a grill mat and smoke for 30 minutes. After the raspberries have been smoked, reserve a few for garnish and place the remainder into a shallow sheet pan with the smoked simple syrup.

Place sheet pan on the grill grate and smoke for 45 minutes. Remove from grill and let cool. Strain through a fine-mesh sieve discarding solids. Transfer the syrup to the refrigerator until ready to use. Makes about 1/2 cup of smoked raspberry syrup.

For cocktail: Add 3/4 ounce smoked raspberry syrup, tequila, lime juice, and lemon juice with ice into a mixing glass. Shake and pour over clean ice. Garnish with smoked raspberries and a grilled lime wheel. Enjoy!
