Our two favorite food groups: bacon and cheese. Get the party started off right with this savory appetizer.

1/2 Pound | sliced bacon |
4 Tablespoon | chopped green onion |
1 Cup | shredded cheddar cheese |

When ready to cook, set grill temperature to 180℉ and preheat with the lid closed for 15 minutes. For optimal flavor, use Super Smoke, if available.

In a medium baking dish, add the cream cheese and sour cream.

Place the baking dish directly on the grill grates. Close the lid, and smoke for 20 minutes, or until desired level of smoke is reached.

Remove the baking dish from the grill and increase the Traeger temperature to 350℉.

Place the bacon slices directly on the grill grates. Close the lid and cook for 15-20 minutes, until the bacon is crispy and fat is rendered.

Remove the bacon from the grill and let stand at room temperature until cool.

In the bowl of a food processor, add the smoked cream cheese, sour cream, green onion, cheddar cheese, garlic powder, and salt. Pulse until combined, then turn out onto a piece of plastic wrap. Form the cheese mixture into a ball and wrap tightly. Refrigerate until well chilled.

Chop the bacon into small pieces and place on a plate with the chopped chive.

Remove the cheese ball from the fridge, unwrap and roll in the bacon mixture. Place the cheese ball on a plate and serve with your choice of crackers. Enjoy!
