1/4 Cup | cheddar cheese |
1 Teaspoon | Salt |
1 Tablespoon | Sugar |
1 1/8 Cup | butter |
7 Tablespoon | ice water |
10 | apples |
1 Tablespoon | ground cinnamon |
1 | orange zest |
1/2 | lemon, juiced |
1 Teaspoon | ginger, minced |
1/3 Cup | brown sugar |
1 | lemon zest |
1 | egg, beaten with 1 tablespoon water |
1 Tablespoon | raw sugar |
1
In the bowl of a food processor combine flour, shredded cheddar, sugar and salt. Pulse to combine. With the machine running, drop in little pieces of cold butter until all butter is added and mixture resembles coarse corn meal.
2
Add cold water 1 Tbsp at a time until dough comes together. You may not need all the water.
3
Turn dough out onto a floured surface and roll into 2 big rounds large enough to cover the pie dish with an overhang of at least 1”.
4
Place into pie dish and prick the bottom with a fork.
5
When ready to cook, set the Traeger to 350℉ and preheat, lid closed for 15 minutes.
6
In a large bowl, combine sliced apples, cinnamon, ginger, orange zest, lemon zest, lemon juice, brown sugar, flour and butter. Toss to coat well and transfer to prepared pie dish.
7
Place the other pie dough on top of the apples, crimp the edges, cut slits into the top to vent, brush with egg wash and sprinkle with sugar.
8
Place directly on the grill grate and cook for 40 minutes or until the crust is golden brown. Let cool.
