Simply seasoned, with smokin' sophisticated flavor. This prime roast is rubbed down with garlic, whole grain mustard, salt and pepper and slow-roasted for a cut that can't be beat.

1 | 3-bone prime rib roast |
1 Tablespoon | black pepper |
2 Tablespoon | kosher salt |
2 Tablespoon | garlic, minced to a paste |
1 Cup | whole grain mustard |
Step 1
Combine salt, black pepper, whole grain mustard and garlic in a small bowl and mix well. Rub mixture all over the exterior of the roast making sure each section is evenly coated.

Step 2
When ready to cook, start the Traeger, set the temperature to 450 degrees F and preheat, lid closed, for 10 to 15 minutes.

Step 3
Place the roast directly on the grill grate with the ribs facing the back of the grill. Close the lid and cook for 45 minutes or until the exterior of the roast has an even layer of browning.

Step 4
Reduce the temperature to 325 degrees F and continue to cook for 2.5 hours or until the internal temperature reaches 125 degrees F.

Step 5
Remove roast from grill and allow to rest 15 minutes before slicing. After roast has rested, remove trussing and bones and slice into 1” inch sections. Enjoy!
