Cornish Game in Mandarin Glaze

2 Tablespoononion powder
1 Tablespoongranulated garlic
1 TablespoonJacobsen Salt Co. Pure Kosher Sea Salt
1 Tablespoonground ginger
5 WholeCornish game hens
15 Sprigfresh thyme
2 oranges, quartered
2 Tablespoonextra-virgin olive oil
1 BottleMandarin glaze

  • Step 1

    When ready to cook, start the Traeger and set the temperature to 375 degrees F. Preheat lid closed, for 10 to 15 minutes.

  • Step 2

    Create the spice mixture: Combine onion powder, granulated garlic, Jacobson’s salt, and ground ginger.

    Ingredients
    • 2 Tablespoon onion powder

    • 1 Tablespoon granulated garlic

    • 1 Tablespoon Jacobsen Salt Co. Pure Kosher Sea Salt

    • 1 Tablespoon ground ginger

  • Step 3

    Remove the hens from the packaging; remove any giblets from each cavity and pat them dry with a paper towel. Place 4-5 sprigs of fresh thyme into each cavity, along with 1 orange wedge.

    • 5 Whole Cornish game hens

    • 15 Sprig fresh thyme

    • 2  oranges, quartered

  • Step 4

    Sprinkle each bird with the spice mixture, and then rub with olive oil. Tie the legs together with butchers twine. Place the Game hens on the grill and cook for 20 minutes.

    • 2 Tablespoon extra-virgin olive oil

  • Step 5

    After 20 minutes, brush each hen with a mandarin glaze of your choice. Let them cook an additional 20 minutes and brush again with the glaze. Cook to an internal temperature of 160 degrees. Enjoy!
