1/2 Cup brown sugar
1 Tablespoon Fennel, ground
2 Teaspoon kosher salt
1 Teaspoon ground black pepper
1 Pound Pork Belly, diced

Step

    Fold a 12" x 36" piece of aluminum foil in half and crimp the edges so there is a rim. Using a fork, poke holes in the bottom of the foil. This way some of the bacon fat will be rendered out and the bacon bites will crisp.

    When ready to cook, set the temperature to 350°F and preheat, lid closed for 15 minutes.

    In a large bowl, combine the brown sugar, ground fennel, salt, and black pepper. Stir to combine.

    Place the diced pork belly into the mixture and toss until well-coated. Transfer the pork pieces to the foil.

    Place on the grill and bake until the pieces are crispy, glazed, and bubbly, about 20-30 minutes. Enjoy!
