Don't let the name scrare you. Smoked pineapple and orange juice, mixed with two types of rum, make this cocktail as lively as they come.

Ingredients

Smoked Orange and Pineapple Juice
As Neededfresh squeezed orange juice
As Neededpineapple juice

1 Ouncelight rum
1 Ouncedark rum
1 Ouncelime juice
1/2 Ouncesmoked simple syrup (homemade or store-bought)
3 Ouncesmoked orange and pineapple juice
1 grilled orange peel, for garnish
1 piece grilled pineapple, for garnish

Steps

  • Step 1

    When ready to cook, set Traeger temperature to 180°F and preheat, lid closed for 15 minutes.

  • Step 2

    Smoked Orange and Pineapple Juice: Pour equal parts fresh squeezed orange juice and pineapple juice into a shallow sheet pan and smoke for 45 minutes. Remove and let cool. Measure out 3 ounces of juice and reserve any remaining juice in the refrigerator for future use.

    Ingredients
    • As Needed fresh squeezed orange juice

    • As Needed pineapple juice

  • Step 3

    Add dark and light rums, 3 ounces smoked orange and pineapple juice, lime juice and Traeger Smoked Simple Syrup to a mixing glass.

    Ingredients
    • 1 Ounce light rum

    • 1 Ounce dark rum

    • 1 Ounce lime juice

    • 1/2 Ounce smoked simple syrup (homemade or store-bought)

    • 3 Ounce smoked orange and pineapple juice

  • Step 4

    Add ice, shake and strain over clean ice into a Tiki glass.

  • Step 5

    Garnish with a grilled orange peel and grilled pineapple. Enjoy!
