Meaty beets take well to smoke and are amazing in green salads, especially if there’s goat or blue cheese to be had. They’re also delicious pickled or pureed for soup. You need to cook the beets before smoking or use already cooked beets sold in the produce section of the supermarket.

Step 1
Preheat the Traeger to 185°F; this will take about 10 minutes. If you have it, use Super Smoke.

Step 2
Place the beets directly on the grill grates and smoke for 30 minutes.

Let cool. Use right away or cover and refrigerate for up to 3 days.
