One-Pan Chicken and Broccoli Alfredo

How can something this easy be so delicious? Simply dump a few ingredients into a pan and then let your Traeger do the work to create a creamy chicken and broccoli pasta that will soon become a regular in your weeknight repertoire.

1 16-oz package penne
3 1/3 Alfredo sauce (from 2 15-oz jars)
3 Cup low sodium chicken broth
2 Cup diced cooked chicken
4 Ounce broccoli florets (about 2 cups)
1 Tablespoon extra-virgin olive oil
2 Tablespoon finely grated Parmesan cheese, plus more for serving
Fresh or dried parsley, for serving (optional)

    Preheat a Traeger Grill to 400°F; this will take at least 15 minutes.

    Put the pasta into either a deep 12x10-inch disposable foil pan (sometimes called a half pan) or a 9x13-inch baking dish. Add the Alfredo sauce, chicken broth, diced chicken, broccoli, and oil and stir well to combine and disperse the ingredients evenly.

    Cover the pan tightly with foil and place directly on the grill grates. Cook for 25 minutes.

    Carefully remove and discard the foil. Give the pasta a good stir and continue cooking, stirring once more during cooking, until the pasta is tender, about another 25 minutes. (Before removing the pan from the grill, try one of the penne and if too chewy, continue cooking for another 5 minutes or so.)

    Stir in the 2 Tbsp of cheese. Serve topped with additional cheese and parsley if you like. Enjoy!
