Nothin' beats a classic southern dish. Roasted pork tasso meets cajun spices for a rice dish that'll become your main dish.

1 Pound | Pork Tasso |
3 Cup | cooked white rice, brown rice or quinoa, for serving |
2 Can | diced tomatoes |
2 Tablespoon | fresh rosemary |
1 | sweet onion, diced |
1 Tablespoon | Cajun Rub |
2 Clove | Garlic, roasted |
To Taste | Salt |
To Taste | Pepper |
4 Cup | chicken stock |
Step 1
When ready to cook, start the Traeger according to grill instructions. Set the temperature to 300 degrees F and preheat, lid closed for 10-15 minutes.

Step 2
Cook the tasso on the grill for about 10 minutes. Take tasso off the grill and chop into cubes.

1 Pound Pork Tasso
Step 3
Mix all ingredients (besides the chicken stock) together in a mixing bowl.

1 Tablespoon Cajun Rub
2 Clove Garlic, roasted

Step 4
Add mixture to a large cast iron pan and add the chicken stock. Cover pan with foil and place on the Traeger.
4 Cup chicken stock

Cook for 45 minutes or until rice is soft. Enjoy!
