Perfectly caramelized grilled peaches take this salad to the next level. The sweet fruit flavor melds with the savory bacon and feta cheese–all tossed in a maple curry vinaigrette.

2 Whole | Peaches, ripe but firm |
1 Tablespoon | maple syrup |
2 Cup | arugula |
1/4 Cup | feta cheese |
1/4 Cup | Toasted pecans |
1/4 Cup | bacon, cooked and chopped |
3 Tablespoon | olive oil |
1 Small | Shallot, finely chopped |
2 Tablespoon | maple syrup |
1 Tablespoon | apple cider vinegar |
1 Teaspoon | curry powder |
1/2 Teaspoon | Salt |
Step 1
When ready to cook set Traeger temperature to 425°F and preheat, lid closed for 15 minutes.

Step 2
Cut the peaches in half and remove the pit. Brush with maple syrup and place cut-side down directly on the grill grate. Cook for 15 to 20 minutes, or until grill marks appear. Remove from grill and set aside to cool.

In a small bowl, whisk together the ingredients for the dressing and set aside.

1 Tablespoon apple cider vinegar
1 Teaspoon curry powder
1/2 Teaspoon Salt
Step 4
Place all ingredients for salad in a large bowl. Slice grilled peaches and place on top.

1/4 Cup feta cheese
1/4 Cup Toasted pecans
1/4 Cup bacon, cooked and chopped

Drizzle the salad with maple curry dressing and taste to check for seasoning. Serve and enjoy!
