If you live in Utah, chances are you've had funeral potatoes, a cheesy-potato casserole popular among members of The Church of Latter-day Saints. As the name implies, it's often served at after-funeral meals, especially in Mormon households, but it's also a popular potluck dish for happier occasions as well. Usually made with canned "cream of" soup, this version uses broth, flour, and milk instead, yet it's just as easy to make. The crunchy topping comes from corn flakes, but crushed potato chips are also a great choice.

1 | 8-oz container sour cream |
1/4 Cup | all-purpose flour |
1 Cup | whole milk or 2% milk |
1 3/4 Cup | low sodium chicken broth |
8 Ounce | shredded cheddar jack cheese |
1/2 Cup | onion flakes |
1 1/2 Teaspoon | kosher salt |
1 Teaspoon | freshly ground black pepper |
1 Cup | corn flakes |
1/4 Cup | finely grated Parmesan cheese |
2 Tablespoon | butter, melted |
1
Preheat the Traeger with lid closed to 400°F; this will take about 15 minutes. Take the potatoes out of the freezer to defrost while the grill heats and you prepare the other ingredients.

In a large bowl, whisk the sour cream and flour until well combined. Slowly whisk in the milk and then the chicken broth. Add the cheese, onion flakes, salt, and pepper. Add the defrosted potatoes and mix well. Scrape the mixture into a 9x13-inch baking dish.
3
In a small bowl, combine the cornflakes, Parmesan, and butter. Scatter the topping evenly over the potatoes.

Place the baking dish directly on the grill grates. Cook, rotating the dish halfway through cooking for the most even browning, until the casserole is golden brown and bubbling around the edges and the center reaches at least 205°F on an instant-read thermometer, 1 to 1¼ hours. (The time can vary depending on your baking dish, the weather, and your grill.)

Let cool for at least 10 minutes before serving. The casserole will continue to thicken as it cools. Enjoy!
