These aren’t the Brussels sprouts you scoffed at as a kid, they’re smoky & seasoned to perfection.

1/2 Pound | thick-cut bacon |
2 Pound | brussels sprouts, halved |
1 Medium | red onion, sliced |
2 Tablespoon | olive oil |
To Taste | salt |
To Taste | pepper |
Step 1
When ready to cook, set the Traeger temperature to 350°F and preheat with the lid closed for 15 minutes.

Step 2
Place the bacon directly on grill grates and cook for 15-20 minutes, or until lightly browned.

Step 3
Remove the bacon from the grill and set aside on a paper towel-lined plate. Increase the Traeger temperature to 375°F.

Step 4
In a large bowl, add the onion and Brussels sprouts. Cut the bacon into 1⁄2-inch-pieces and add to the bowl. Drizzle with olive oil, and season with salt and pepper. Toss to coat and pour into a baking pan.

1 Medium red onion, sliced
2 Tablespoon olive oil

Place the baking pan directly on the grill grates. Close the lid and cook for 30 minutes, mixing halfway through cooking.
