If you’ve got to eat your vegetables, these fancy-looking carrots taste smokin’ delicious. They're easy to make & are perfect for a holiday side dish or any night of the week.

12 heirloom carrots
3 Tablespoonhigh-quality olive oil
1 1/4 TeaspoonJacobsen Salt Co. Pure Kosher Sea Salt
1/2 Teaspoonfreshly ground black pepper
2 Tablespoonminced parsley

  • Step 1

    When ready to cook, set Traeger temperature to 425°F and preheat, lid closed for 15 minutes.

    500 ˚F / 260 ˚C

  • Step 2

    If the carrots are thick, cut them in half lengthwise; if not, leave whole. Toss them in a bowl with the olive oil, salt and pepper.

    • 12  heirloom carrots

    • 3 Tablespoon high-quality olive oil

    • 1 1/4 Teaspoon Jacobsen Salt Co. Pure Kosher Sea Salt

    • 1/2 Teaspoon freshly ground black pepper

  • Step 3

    Transfer to a sheet pan, spreading into a single layer and roast on the Traeger for 20 minutes until browned and tender.

  • Step 4

    Toss the carrots with minced parsley. Season to taste, and serve. Enjoy!
