2 Pound | skirt steak |
3/4 Cup | Traeger Prime Rib Rub |
Step 1
Combine all ingredients for the marinade in a medium bowl and stir well to combine, dissolving the salt.

1/4 Cup huile d’olive

Step 2
Trim any excess fat from the skirt steak and place in a large resealable bag. Pour marinade over the steak and transfer to the refrigerator. Marinate in the refrigerator for at least 2 hours.

Remove from marinade and season both sides of the skirt steak with Traeger Prime Rib Rub. Let rest for 30 minutes.

When ready to cook, set Traeger temperature to 225℉ and preheat, lid closed for 15 minutes. For optimal flavor, use Super Smoke if available.

Place the skirt steak directly on the grill grate and smoke for 45 minutes.

Remove steak from grill. Increase Traeger temperature to 450° and preheat, lid closed 15 minutes.

When grill reaches temperature, sear each side of the steak for 2 minutes or until meat reaches an internal temperature of 135℉ for medium-rare.
