2 Pound | russet potatoes, peeled and thinly sliced |
3 Tablespoon | kosher salt |
2 Tablespoon | freshly ground black pepper |

When ready to cook, set the temperature to 375℉ and preheat, lid closed for 15 minutes.

Brush the bottom of a cast iron skillet with part of the melted butter. Place potato slices vertically around the outer edges then fill in the middle in the same fashion.

Pour additional melted butter over the top of the layers and sprinkle with salt and pepper.

Place skillet in grill and cook for 35 to 40 minutes or until potatoes are fork tender and golden brown.

Garnish with a sprinkle of fresh thyme over the top of the potatoes. Enjoy!
