Blow your veggie-loving tastebuds away with this wood-fired take on grilled cabbage. Cabbage steaks are grilled over cherry wood and drizzled with a melt-in-your mouth bacon vinaigrette.

1 | shallot, minced |
2 Tablespoon | sherry vinegar |
1 Tablespoon | whole grain mustard |
1 Teaspoon | chopped thyme |
2 Tablespoon | olive oil |
1 Head | Green Cabbage, cut into 3/4" thick slices (about 6 steaks) |
As Needed | Olive Oil, for brushing |
To Taste | salt and pepper |

When ready to cook, start the Traeger grill, set the temperature to 450 degrees F and preheat, lid closed, for 10 to 15 minutes.

For the vinaigrette: In a large skillet, cook the bacon in the olive oil over medium-high heat until browned and crisp. Remove bacon from heat and stir in the shallot, vinegar, mustard, thyme and set aside.

Brush cabbage steaks with olive oil and season with salt and pepper. Place cabbage steaks directly on grill grate and grill 5 minutes per side.
