Smoked Pumpkin Spice Latte

1 Smallsugar pumpkin
As Neededolive oil
1 Cansweetened condensed milk
1 Cupwhole milk
2 TablespoonTraeger Smoked Simple Syrup
1 Teaspoonpumpkin pie spice
pinch of salt
As Neededcinnamon
As Neededwhipped cream
As Neededshaved nutmeg
8 Ouncesmoked cold brew coffee

  • Step 1

    This recipe uses Smoked Cold Brew Coffee. When ready to cook, set temperature to 325℉ and preheat, lid closed for 15 minutes.

    325 ˚F / 163 ˚C

  • Step 2

    Cut the sugar pumpkin in half, scoop out the seeds and discard. Place the pumpkin halves cut side up on a baking sheet and brush lightly with olive oil.

    • 1 Small sugar pumpkin

    • As Needed olive oil

  • Step 3

    Place the sheet tray directly on the grill grate and cook 45 minutes or until the flesh is tender. Remove from heat and place on the counter to cool.

  • Step 4

    When the pumpkin is cool enough to handle, scoop out the flesh and mash until smooth.

  • Step 5

    Place 3 Tbsp of the pumpkin puree in a separate bowl and reserve the remaining for another use.

  • Step 6

    Add the sweetened condensed milk, whole milk, Traeger Smoked Simple Syrup, pumpkin pie seasoning and salt to the pumpkin puree. Whisk to combine.

    • 1 Cup whole milk

    • 2 Tablespoon Traeger Smoked Simple Syrup

    • 1 Teaspoon pumpkin pie spice

    •  pinch of salt

  • Step 7

    Pour the cold brew over ice, add desired amount of pumpkin spice creamer and top with whipped cream, cinnamon, and shaved nutmeg if desired. Enjoy!
