Roasted Cod With Meyer Lemon Herb Butter

Our wood-fired fish recipe is smothered in zesty compound butter & baked to flaky perfection. The crisp Meyer citrus gives the fish a sweet & tangy seasoning.

4 TablespoonSalted Butter, Softened
1/2 Meyer Lemon, zested, juiced
1 Clovegarlic, minced
1 TablespoonFresh Herbs Such As Tarragon, Parsley, Basil, or Chives

  • Step 1

    When ready to cook, set temperature to High and preheat, lid closed for 15 minutes.

  • Step 2

    Compound butter: Combine butter, lemon zest and juice, the garlic, herbs, and the Traeger Salmon Shake. Refrigerate if not using right away.

    • 4 Tablespoon Salted Butter, Softened

    • 1/2  Meyer Lemon, zested, juiced

    • 1 Clove garlic, minced

    • 1 Tablespoon Fresh Herbs Such As Tarragon, Parsley, Basil, or Chives

    • 2  Traeger Salmon Shake

  • Step 3

    Use a tablespoon of the butter to grease a heat-proof baking dish.

  • Step 4

    Arrange the cod fillets in a single layer in the baking dish. Dot evenly with bits of the compound butter.

  • Step 5

    Bake for 12 to 15 minutes, or until the fish is cooked through.

  • Step 6

    Spoon sauce over each serving. Enjoy!
