1 Poundground pork
1/2 PoundBacon, sliced
3 Teaspoonkosher salt
2 Teaspoonfreshly ground black pepper
2 Teaspoonfresh sage
2 Teaspoonfresh thyme
1/2 Teaspoonfresh rosemary
1/2 TeaspoonMarjoram, dried leaves
1/2 Teaspoonground nutmeg
1/2 Teaspooncayenne pepper
1 Teaspoonred pepper flakes

  • Step 1

    In a large bowl, combine pork with all other ingredients, cover, and chill in the refrigerator for at least 1 hour (or overnight for best flavor).

    • 1 Pound ground pork

    • 1/2 Pound Bacon, sliced

    • 3 Teaspoon kosher salt

    • 2 Teaspoon freshly ground black pepper

    • 2 Teaspoon fresh sage

    • 2 Teaspoon fresh thyme

    • 1/2 Teaspoon fresh rosemary

    • 1/2 Teaspoon Marjoram, dried leaves

    • 1/2 Teaspoon ground nutmeg

    • 1/2 Teaspoon cayenne pepper

    • 1 Teaspoon red pepper flakes

  • Step 2

    If grinding your own sausage, use the fine blade of a meat grinder and pass the pork and bacon mixture through once.

  • Step 3

    Either form into patties or push through the small tube of a sausage stuffer to form links.

  • Step 4

    When ready to cook, start the Traeger grill and set to High. Allow the grill to preheat for 10-15 minutes.

    Place the links or patties directly on the grill grate and cook for 10-15 minutes, flipping once, until an internal thermometer reads 175 degrees F.
