Spiced apple simple syrup meets lime juice and a splash of vodka for a smoky cocktail that's perfect for the fall season.

When ready to cook, set Traeger temperature to 165°F and preheat, lid closed for 15 minutes.

Place chopped apples on a grill mat and place directly on the grill grate. Smoke apples for 40 minutes.

After 40 minutes, transfer apples to a shallow baking dish. Add sugar, cinnamon sticks, cloves and 1 cup water and stir.

Increase Traeger temperature to 375°F and preheat, lid closed for 15 minutes.

Place apple mixture back on the grill and cook for 30 minutes.

Coat lime wheels in sugar and place on the grill next to simple syrup. Grill for 15 to 20 minutes or until the edges are caramelized or grill marks appear. Remove from grill and set aside.

Remove apple mixture from grill and strain, discarding any solids. Let cool.

Once the simple syrup is cool, combine vodka, lime juice and 1 ounce simple syrup in a cocktail shaker. Dry shake for 30 seconds. Strain over ice in a 12 ounce Collins glass and top off with ginger beer.

Garnish with grilled lime wheel and enjoy!
